Cheesy Shrimp Dip

Cheesy Shrimp Dip is a simple dip to impress your guest or make for the family to snack on during game night at home. No matter who you are whipping this dip up for you’re going to be impressed with how simple it is and how much of a “WOW” it packs. 

Prep Time: 15 Minutes | Cook Time: 40 Minutes | Servings: 6 

Ingredients:

  • Large Yellow Onion, diced
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Butter
  • 8 oz Cream Cheese, softened
  • About 20 medium sized shrimp (about 6.5 oz), chopped up
  • 1/4 Teaspoon of Salt 
  • 1/4 Teaspoon of Pepper
  • 1/2 Teaspoon of Garlic Powder
  • 1/2 Teaspoon Smoky Chili Powder
  • 1 Cup shredded Mozzarella Cheese
  • 1 Cup shredded Gouda Cheese
  • 2 Tablespoons grated Parmesan

Directions: 

First, get the oven preheating to 375°F. Now, in a medium nonstick skillet add half the Olive Oil and all of the Butter over medium-low heat. Once the butter has melted add the diced onion and sprinkle lightly with salt. Let the onions cook down until they are very soft and browned, about 15 minutes. You will need to stir them occasionally so they don’t burn. When finished cooking remove from skillet and set aside in a medium size mixing bowl to cool. 

Next, add the remaining Olive Oil to the same nonstick skillet over medium heat. Add in the chopped shrimp (picture below for reference) and sprinkle with the Salt, Pepper, Garlic Powder, and Smoky Chili Powder. Toss in the pan to coat the shrimp completely. Cook until the shrimp is firm, about 4-5 minutes. Set aside when finished. 

In the mixing bowl with the onions add the Mozzarella, Gouda, and Cream Cheese. Mix until well combined. The easiest way to accomplish this is with a hand mixer on low and working up to medium speed. Once well combined gently fold in the cooked shrimp. Next, transfer the mixture into an 8×8 baking dish. Smooth until even in the dish. Lastly, sprinkle with the Parmesan. 

Bake in the oven for 25 minutes until the edges are lightly browned and the dip is bubbling. Serve with warm pita chips or tortilla chips. Enjoy!
