Chicken Quesadillas

Whether it’s (football) game day or (board) game night, you’re going to need a great appetizer to satisfy lots of hungry stomachs. Chicken quesadillas are quick, easy, and can be personalized so many ways. So, call a few friends up, break out Monopoly, and fix up these chicken quesadillas with another appetizer or two! 

Prep Time: 5 Minutes | Cook Time: 20 Minutes | Servings: 2

Ingredients:

  • 1 large yellow onion, cut into 1/4 inch slices
  • 1 Tablespoon butter
  • 2 Tablespoon olive oil
  • 1 Tablespoon canola oil 
  • 1/2 lb chicken breast, cut into 1/2 inch cubes
  • Seasoning mix, 1/4 tsp of each: salt, pepper, onion powder, garlic powder, chipotle powder
  • 8 Tablespoons Mexican blend shredded cheese
  • Taco Bell Spicy Ranchero Sauce
  • 2, XL flour tortilla shells

Directions: 

In a small bowl combine the chicken, seasoning mix, and 1 tablespoon of the olive oil until the chicken is evenly coated. Add the chicken to a medium size skillet and cook for 7-8 minutes over medium heat (or until cooked through). Remove chicken from heat and set aside. 

In a small skillet combine the butter and remaining olive oil over medium heat. Once the butter has melted add the sliced onion and saute until the onion is softer and slightly browned, about 7 minutes. You will need to move the onions around occasionally so they don’t burn. Remove from heat when finished. 

Now it’s time to build the quesadilla! In a large skillet (I used the same one I cooked my chicken in, but I washed before using for my quesadilla) pour in the canola oil and warm over medium heat. Move the oil around so that it coats the skillet evenly. Next, place the tortilla shell into the skillet so that half of the shell is on the bottom of the pan (you’ll see what I mean in the pictures below). Add 2 Tablespoons of the cheese into the shell, then half the cooked onions, half the chicken, a drizzle of the Spicy Ranchero sauce, and then 2 Tablespoons of cheese. Fold the top of the quesadilla over and cook for about 4 minutes per side. Repeat for a second quesadilla. 

Cut the quesadilla into 4 sections and enjoy by itself, with guacamole, or your favorite salsa!
